Ingredients:
1 1/2 cups coconut cookie crumbs, (17 cookies)
3 tablespoons butter or margarine, melted
1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/4 cup Key lime juice or Regular lime juice
1 tablespoon grated lime peel
strawberries, sliced for color if desired
Directions:
1. Heat oven to 350ºF. Grease square pan, 9x9x2 inches.
2. Mix cookie crumbs and butter thoroughly . Press evenly in bottom of pan. Refrigerate
3. Beat cream cheese in bowl with electric mixer until fluffy. Slowly
beat in milk until smooth. Mix in lime juice and lime peel. Spread over
layer in pan.
4. Bake about 35 minutes or until center is set. Cool 30 minutes. Cover loosely and refrigerate at least 3 hours until chilled.
Garnish . Store covered in refrigerator.
