Ingredients:
1 pkg Chicken Gizzards
1 small Onion, thinly sliced
Spicy Meat Rub (optional)
1 c. Bread Crumbs
Directions:
Rinse gizzards in cool water.
Place bread crumbs and seasoning in dish. Add a few gizzards at a time
to coat. Drop into a hot cast iron skillet with enough oil to cover
bottom. Depending on size of your skillet, will depend on how many
gizzards to add at a time. It took me 2 skillets to get all cooked up.
Add your onions to skillet with gizzards. Keep an eye on them and turn
when nice and brown on one side. At the same time, stir in the onions.
Mine took about 20 min or so to fully cook.
Put onto paper towel to drain any excess oils. Serve hot or cold!
