Granny’s Rolled Dumplings


Ingredients:

Dumplings

2 cups flour
4 tsp Shortening or Lard
Almost 1 tsp baking powder
1 pinch salt
3/4 cup milk, or so… 


Directions:

Mix together flour, shortening, baking powder and salt. Add milk a little at a time until dough forms; roll into a ball.

Roll out into thin onto floured board; cut into bit sized pieces.

Heat chicken broth with chicken and veggies until simmering, see recipe below. Drop dumplings in a few at a time to prevent sticking together. Once all are in, give it a gentle stir; let simmer for 10 minutes covered then 10 minutes uncovered, or until they all float to the surface. Season the broth to taste then enjoy!

Chicken and broth with veggies:


1 whole chicken, 3 to 4 lbs.
Carrots, sliced or diced
Onions or shallots, diced
Celery, sliced
Peas, if desired
Spinach leaves, if desired
1 tsp salt
Pinch pepper
Parsley to taste
Water
Dumplings, see above


Directions:

Wash whole chicken and put into heavy pot. Add veggies and cover with water; add seasonings. Bring to a boil; reduce to a simmer until chicken is cooked. Remove chicken; continue to simmer chicken stock.

Let cool a bit and then remove the meat from the bones. Return meat back into pot. Bring to a boil; reduce to a simmer.

Drop dumplings in a few at a time to prevent sticking together. Once all are in, give it a gentle stir; let simmer for 15 to 20 minutes, until they all float to the surface. Season the broth to taste then enjoy!
