Ham And Green Bean Soup
Ingredients:
4 cups chicken stock
1 ½ cups onions, chopped
3 cups ham, chopped
3 cups green beans, canned with juice
3 cups potato, cubed
2 cups cabbage, chopped or shredded, this is optional
1 cups celery with leaves, chopped
½ cup mushrooms, chopped or sliced
2 Tbsp fresh parsley, chopped or 1 Tbsp dried parsley
1 Tbsp fresh dill or 1 tsp dry dill
2 tsp fresh basil or ½ tsp dried basil
2 tsp fresh sage or ¼ tsp dry sage
¼ tsp onion salt
¼ tsp garlic powder
1 pinch thyme or lemon thyme
1 pinch pepper
½ cup butter
1/3 cup flour
2 cups milk, half & half or cream
Directions:
Over medium heat cook chicken stock, onions, ham, green beans, potato, celery, mushrooms and herbs and spices in a large pot until vegetables are tender.
In skillet melt butter; stir in flour, stir until smooth roux forms. Add roux to hot soup a little at a time until mixed well.
Reduce heat to low, add milk, stirring constantly. Simmer for about an hour or so. Serve hot.
