Spicy Black Bean Hummus
Ingredients:
3 1/2 cups black beans, canned
1 1/2 tsp olive oil
1 small onion, diced or 1 shallot
1/2 green pepper, diced
2 cloves garlic, minced
2 Tbsp ground cumin or chili powder
2 or 3 Tbsp chopped fresh cilantro
1/4 cup vegetable, chicken or beef broth
Cut chives for garnish
Directions:
Rinse and drain black beans, set aside.
Heat olive oil in skillet over medium high setting; Add onions, peppers, garlic; sauté about three minutes or until vegetables are fragrant and slightly browned. Add cumin and cilantro; stir well, reduce heat to medium; cook another two minutes.
Place beans in food processor and pulse several times. Add vegetable mixture and pulse a few more times. Add broth in small batches to thin dip to desired consistency.
Garnish with chives. Serve immediately or store in refrigerator for up to 10 days.
Makes 4 cups…..8 Servings
Serve as dip with tortilla chips, crackers or veggies of choice. Or build a great sandwich on bread or tortillas with ham and or veggies. Also wonderful garnish for veggie burgers, hamburgers and salmon patties.Try Black bean hummus grilled cheese sandwiches.Try Black bean hummus pizza
