Sweet Potato Muffins



Ingredients:

2 cups self-rising flour
2 cups sugar
2 teaspoons ground cinnamon
1 egg
2 cups cold mashed sweet potatoes - plain potatoes, nothing added
1 cup canola oil

Directions:


1. Preheat oven to 375 degrees F
2. In a small mixing bowl, whisk together the flour, sugar and cinnamon. In another bowl, whisk the egg, sweet potatoes and oil. Stir into dry ingredients just until moistened.
3. Fill greased muffin cups two-thirds full. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
4. These muffins are delicious as is. If desired, ice the muffins with your favorite vanilla icing or drizzle with your favorite powdered sugar glaze recipe.

Makes 2 dozen muffins.
