Chipotle, Onion And Avocado Dip


Serves: 4

Ingredients:


3 tbsp. butter
1 cup onions, finely diced
2 tbsp. chipotle spice
1/2 tbsp. oregano, finely chopped
3 large avocados
1 cup sour cream
1 tbsp. cilantro, finely chopped
1 medium Roma tomato, diced
2 tbsp. lime juice
Salt and pepper to taste

Directions:

Melt butter in a pan. Add onions and cook on medium heat for about 6 minutes or until they begin to turn golden brown.


Add chipotle spice and oregano. Cook for about 2 minutes while stirring often.


Remove the seasoned onions from the pan and let them cool to room temperature.


Mash avocados in a medium mixing bowl. 


Add sour cream, cilantro, Roma tomato and lime juice to the mashed avocados and mix together evenly.


Add the cooled onions and mix thoroughly.


Season to taste with salt and pepper.

Serving Suggestions:

•Serve as a dip with tortilla chips, pita, crackers, veggies or serve on tacos, sandwiches and salads.

Chipotle Lime Pork Chops

Chipotle peppers are dried and smoked jalapeño peppers. You'll enjoy the marinade's distinctively smoky character and pleasantly spicy bite that is enhanced with lime juice.

Ingredients:

  
 
Directions:
  1. Mix Marinade Mix, oil, water and lime juice in small bowl. Place pork chops in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
  2. Refrigerate 15 minutes or longer for extra flavor. Remove pork chops from marinade. Discard any remaining marinade.
  3. Grill over medium-high heat 5 to 7 minutes per side or until desired doneness.

Chipotle Pepper Marinated Pork

This easy marinade features the one-of-a-kind smoky flavor and spicy heat of chipotle pepper that's delicious with pork as well as chicken or beef.

 Directions:
 
  1. Mix Marinade Mix, oil and water in small bowl. Place pork in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
  2. Refrigerate 15 minutes or longer for extra flavor. Remove pork from marinade. Discard any remaining marinade.
  3. Grill over medium-high heat 25 to 30 minutes or until desired doneness, turning occasionally.
Cooking Tip:  Prepare as directed above, adding 2 tablespoons lime juice to marinade.
