Crockpot Honey Sesame Chicken



Ingredients:

4 boneless, skinless chicken breasts (thighs would be fine too)
Salt and pepper
1 cup honey
1/2 cup soy sauce
1/2 cup diced onion
1/4 cup ketchup
2 tablespoons vegetable oil (could also use olive oil or canola oil)
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional – doesn’t really add heat, just adds more flavor)
4 teaspoons cornstarch dissolved in 6 Tablespoons water
Sesame seeds


Directions:

Season both sides of chicken with lightly with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce.
Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds and serve over rice or noodles.
*You can also sprinkle more red pepper flakes on top if you want more heat.

Chunky Chicken Chili

Ingredients:
  • 2   pounds boneless, skinless chicken thighs
  • 1   large green pepper, seeded and chopped
  • 1   small onion, chopped
  • 1   can (14.5 ounces) low-sodium chicken broth
  • 1 1/2  cups tomatillo salsa (salsa verde)
  • 2   cans (15.5 ounces each) great Northern beans
  • 1/2  teaspoon ground cumin
  • 1/4  teaspoon black pepper
  • 1   package (10 ounces) frozen corn kernels, thawed
  • 1/4  cup fresh cilantro, coarsely chopped
  •  Tortilla chips (optional)

Directions:

1. Place chicken thighs in slow cooker and top with green pepper and onion. In blender, combine chicken broth, salsa and 1 can of the beans (drained and rinsed). Puree until smooth. Add to slow cooker, along with cumin and black pepper.
2. Cover and slow cook for 6 hours on HIGH or 8 hours on LOW. Uncover, and remove chicken thighs to cutting board. Stir corn, remaining can of beans (drained and rinsed) and cilantro into slow cooker. Shred chicken and return to slow cooker. Serve with tortilla chips, if desired.

Ingredients:
  • 3  15 - 15 1/2 ounces cans Great Northern, pinto, or cannellini (white kidney) beans, rinsed and drained
  • 2 1/2  cups chopped cooked chicken
  • 1   cup chopped onion (1 large)
  • 1 1/2  cups chopped red, green, and/or yellow sweet pepper (2 medium)
  • 2   fresh jalapeno chile peppers, seeded and chopped (see tip, page XX)
  • 2   cloves garlic, minced
  • 2   teaspoons ground cumin
  • 1/2  teaspoon salt
  • 1/2  teaspoon dried oregano, crushed
  • 3 1/2  cups chicken broth
  • Shredded Monterey Jack cheese (optional)
  • Broken tortilla chips (optional)


Directions:

1. In a 3-1/2- or 4-quart slow cooker stir together the drained beans, chicken, onion, sweet pepper, jalapeno pepper, garlic, cumin, salt, and oregano. Stir in chicken broth.
2. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. If desired, top each serving with shredded cheese and broken tortilla chips. Makes 6 servings.

Crockpot Gumbo


Ingredients:

3 tablespoons flour
3 tablespoons oil
1/2 pound smoked sausage, cut into 1/2 inch slices
2 cups frozen cut okra
1 large onion, chopped
1 large green bell pepper, chopped
3 cloves garlic, minced
1/4 teaspoon ground red cayenne pepper
1/4 teaspoon pepper
1 can (14.5 ounce size) diced tomatoes, undrained
1 package (12 ounce size) frozen shelled deveined cooked medium shrimp, rinsed
1 1/2 cup uncooked regular long-grain white rice
3 cups water


Directions:

In small saucepan, combine flour and oil; mix well. Cook, stirring constantly, over medium-high heat for 5 minutes.This is your Roux. Reduce heat to medium; cook, stirring constantly, about 10 minutes or until mixture turns reddish brown. Place flour-oil mixture in 3 1/2 to 4 quart Crockpot.

Stir in all remaining ingredients except shrimp, rice and water. Cover; cook on low setting for 7-9 hours. When ready to serve, cook rice in water as directed on package. Meanwhile, add shrimp to gumbo mixture in crockpot; mix well. Cover; cook on low setting for additional 20 minutes. Serve gumbo over rice.

Crockpot Ranch Pork Chops

Ingredients:

1 package of boneless pork chops
1 can of Cream of Chicken soup
1 packet dry Ranch dressing mix


Directions:

In crock pot layer pork chops, add the cream of chicken soup, then sprinkle dry Ranch dressing all over.

Cover and cook on high for 4 hours OR Low for 6 hours.

The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes

Crockpot Hawaiian Chicken












Ingredients:

1       Can Crushed Pineapples
1       Cup BBQ Sauce (Doesn't have to be Hawaiin-Style, I've used Honey BBQ Sauce several times)
2-4   Boneless Chicken Breasts (Or however many you need for your family)

Directions:


1. Mix together BBQ Sauce and Pineapples together in bowl.
2. Place chicken in Crock Pot
3. Pour mixture over chicken
4. Cook on low for 5-6 hours.

I often use sugar free bbq sauce to cut down on the sugar!!

Sweet Baby Ray's Crockpot Chicken










Ingredients:

4-6    chicken breast
1        bottle Sweet Baby Ray's sauce
1/4     c vinegar
1        tsp red pepper flakes
1/4     c brown sugar
1        tsp garlic powder


Directions:

Mix everything but chicken

Place chicken in crockpot (frozen is ok)

Pour sauce mixture over chicken

Cook on low 4-6 hours

Sausage Breakfast Casserole










Ingredients:

1    pkg. (26-32 ounces) frozen shredded hash brown potatoes
1    pkg. Jimmy Dean  Hearty Original Sausage Crumbles
2    cup (8 ounces) shredded mozzarella cheese
1/2 cup (2 ounces) shredded Parmesan cheese
1/2 cup julienne cut sun dried tomatoes packed in oil, drained
6    green onions, sliced
12  eggs
1/2 cups milk
1/2 teaspoon salt

1/4 tsp. black ground pepper

Directions:

1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.

2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.

3. Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended.

4. Pour evenly over potato-sausage mixture.

5. Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.


Notes
Substitute 1 cup chopped fresh tomato for sun dried tomatoes, if desired.
