Crispy Oven Roasted Parmesan Potatoes

Ingredients:

  • 6 Medium Potatoes, peeled
  • 1 1/2 cups of Beef or Chicken Broth
  • 2 Tablespoons of butter
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 Tablespoons Olive Oil
  • 1/3 cup Parmesan cheese, freshly grated

Directions:

  1. Preheat oven to 400 degrees F.
  2. Cut the potatoes in 1 inch cubes and place in a bowl with the olive oil, pepper, garlic powder & onion powder then toss until the potatoes are well coated.
  3. In a medium pot, pour the broth & butter together, bring to a simmer.
  4. Add the coated potatoes in and bring to a boil for 5-8 minutes, stirring gently until slightly tender.
  5. Transfer the potatoes to a baking dish with the broth/butter mixture, making sure the potatoes are not overlapping each other, spread them out into one layer.
  6. Sprinkle with Parmesan cheese & gently mix to ensure they are all coated.
  7. Bake in the oven for 45 minutes to 1 hour or until browned and crisp.
  8. Flip once with a spatula during cooking to ensure even crisping.
  9. Remove the potatoes from the oven, season to taste & serve hot.

Baked Parmesan Tomatoes












Ingredients:

4    tomatoes, halved horizontally
1/4 cup freshly grated Parmesan cheese
1    teaspoon chopped fresh oregano
1/4 teaspoon salt
      Freshly ground pepper, to taste
4    teaspoons extra-virgin olive oil


Directions:

Preheat oven to 450 degrees.

Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.

Chicken Parmesan



Ingredients:

1.5 lbs chicken breast tenders
1 cup plain bread crumbs
1/4 cup grated Parmesan cheese
1 teas garlic salt
1/2 teas garlic powder
1/4 teas ground black pepper
1 egg
1/4 cup milk
2 Tbl extra virgin olive oil
1 jar (1 lb. 10 oz.) spaghetti sauce
1 lb ziti
1/2 grated Parmesan cheese
1 cup part skim mozzarella cheese

Directions:

Mix bread crumbs, Parmesan cheese, garlic salt, garlic powder, and pepper. In a small bowl, mix egg and milk. Cut chicken tenders into 1.5 inch cubes. Dip chicken cubes in egg/milk mixture, and then roll in bread crumb mixture.

Heat olive oil over medium heat. Pan fry chicken pieces until browned, approx. 4 minutes on both side.

While chicken is cooking, prepare ziti per package directions until al dente.

When chicken is done, remove from heat and let sit on a paper towel.

When ziti is done cooking, drain and pour into greased (Pam) 9x14 pan. Pour spaghetti sauce over pasta, and sprinkle with 1/2 cup Parmesan cheese.

Arrange chicken in single layer over pasta. Sprinkle mozzarella cheese over chicken, and bake in 350 F oven for 25 minutes or until heated through and cheese melted.

Makes: 8 servings.

Parmesan Crusted Fish



Ingredients:

3/4 cup freshly grated Parmesan cheese
2 teaspoons paprika
1 tablespoon chopped flat-leaf parsley
4 fillets (about 1 pound total)
1 lemon, cut into wedges

Directions:

Preheat the oven to 400 degrees . In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.
