Cool Cucumber Salad



So simple to make, so refreshing to enjoy. This cucumber salad is a winner at any warm-weather gathering.

Ingredients:


Directions:

  1. Place cucumber slices in medium bowl. Sprinkle with salt. Stir in onions.
  2. Mix remaining ingredients in small bowl. Pour over cucumbers and onions; toss lightly. Cover.
  3. Refrigerate 1 hour or until ready to serve. Toss before serving.

Cooking Tips:

Sour Cream Dill Cucumber Salad: Prepare cucumbers and onion as directed. Omit vinegar, water and sugar. Mix 1/2 cup sour cream and seasonings. Toss with cucumber mixture.

Fresh Cucumber Salad




Ingredients:

7-cups unpeeled pickling cucumbers sliced thin (about 7 large dills)
1-cup sliced onions
1-cup sliced green peppers
1-tbsp salt
1-cup white vinegar
2-cups sugar
1-tsp celery seed
1-tsp mustard seed

We used red pepper


Directions:


Mix cucumbers, onions, peppers and salt; set a side
Put vinegar, sugar, celery seed and mustard seed in a pot and bring to a boil
Remove from heat and let cool for one hour
Pour mixture over cucumbers
Put in jars and store in refrigerator
Will keep up to 2 months.

Cucumber Sandwich


Ingredients:

1 Cucumber
1 Carrot
1 Stalk of Celery
1 Green Onion
1 Handful of Flat Parsley
1 Lime (squeeze out the juice and set aside)
1 Splash of Vinegar
Dash of Salt and Pepper
The seeds from the Cucumber
1 Aleppo chili (or cayenne)
1 Chicken Breast


Directions:

Peel the cucumber and scoop out the seeds with a tea spoon. Relish: one carrot, one stalk of celery, one green onion, a handful of flat leaf parsley, juice of one lime, the scooped out seeds of the cucumber (one), one tbs olive oil, dash of salt, pepper, and Aleppo chili (or cayenne). Blend 5 second in the mixer to keep it chunky. Taste it and add more lime juice or a splash of vinegar if it is not tangy enough. Slice a chicken breast in thin strips and grill/saute/pan fry them with just a bit of salt and pepper. Place the cucumber on a plate and scoop some of the relish in it to level it, add the grilled chicken strip, scoop some more relish in the middle on top of the chicken and cover it all with the other part of the cucumber. The whole thing can be juicy, so eat it over a plate. When taken for a lunch, just keep it all separate until it's time to eat and build them on the spot.

Roast Beef & Cheese Cucumber "Sandwiches"


Ingredients:

Slices of Cucumber
Cold Cuts (preferably lowest sodium you can find)
Sliced Cheese


Directions:



1 slice of cheese and meat makes about 4 "sandwiches" you can spear them with a jazzy food pick for parties. For ease of assembly the day of a party (great weight loss friendly appetizers) or for a quickly made lunch during the week pre-cut the cucumbers the night before and place in a Ziploc baggie in fridge.

Cucumber Salad

Ingredients:

1 large cucumber
2 tsp. coarse sea salt
1 Tbsp. light sour cream
1 tsp. finely chopped onion
1 tsp. fresh dill, chopped
1 tsp. vinegar
1 tsp. sugar -
*try with Greek yogurt instead of sour cream*

Directions:

Mix together and enjoy.
