Bacon Explosion
Ingredients:
2 pounds thick cut bacon
2 pounds Italian sausage
1 jar of your favorite barbeque sauce
1 jar of your favorite barbeque rub
Directions:
Since we've been making our own rub and sauce why not use them.
Weave the bacon, about 5 strips each way and top with some rub. Layer the sausage to the edges of the bacon, keeping an even layer . Cook any remaining bacon and crumble and put on top of the sausage layer. Top with some sauce and some more rub. Roll the whole thing together putting the seam side down. Add more rub to the outside of the roll.
Grill at 225 degrees. It usually takes an hour for each inch of thickness but check for doneness with a thermometer. It should be done to 165 degrees. Top with more sauce when almost done cooking.
Slice and serve either on it's own or as a sandwich.
