Queso Fundido
Ingredients:
1/2 pound chorizo sausages, casings removed
10 ounces Monterey Jack cheese, shredded
1/2 cup canned diced tomatoes and green chiles, drained
½ cup fresh poblano pepper, seeded and sliced ½ inch strips
½ cup white onion, sliced ½ inch strips
½ cup tequila**
1 tbsp. chopped fresh cilantro
Tortillas or chips
Directions:
Preheat oven to 350°F.
In a skillet, cook the chorizo until almost done, drain well.
Add the poblano and onion and cook until tender.
Completely remove pan from heat.
Carefully add tequila.
Return to heat and simmer, uncovered, for 15 to 20 seconds or until most of the tequila has dissipated.
Place cheese and canned tomatoes in a microwave-safe bowl and microwave on high power, stopping and stirring every 15 seconds, until the cheese has melted and combined with the tomatoes.
In a medium casserole or glass dish, stir the cheese mixture with the chorizo, peppers and onions.
Bake uncovered about 10-15 minutes or until cheese is melted through and slightly golden brown on top.
Remove from oven and sprinkle with cilantro.
Serve with tortillas.
Note:
**If you want to double the recipe, do not double the tequila. Continue to use only ½ cup.
