Spinach Strawberry Champagne Salad

Ingredients:

Champagne Vinaigrette:

• 2 tablespoons cup olive oil
• 2 tablespoons Orange Muscat Champagne Vinegar (from Trader Joe's)
• ½ teaspoon dijon mustard
• 1 teaspoon white sugar
• ¼ teaspoon garlic powder
• ¼ teaspoon italian seasoning

Spinach Strawberry Salad:

• 3 cups baby spinach leaves
• ¼ cup blue cheese
• ½ cup chopped walnuts
• 1 cup sliced strawberries

Directions:

1. In a small bowl stir together all the ingredients for the vinaigrette. Set aside.
2. In a large bowl toss together the spinach, blue cheese, walnuts, and strawberries. Just before serving, drizzle the vinaigrette over the salad.
