Ingredients:
4-5 boneless, pork chops (thick cut)
4-5 tablespoons of cup dark brown sugar
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
8 tablespoons butter
1/2 cup blue cheese crumbles
1 cup of chopped spinach
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- Slice a pocket in each pork chop and place in baking pan
- Prepare the Pork chop stuffing by combining 4 tablespoons of butter, blue cheese and spinach in a bowl and mix. Fill the pork chops with this mixture.
- Place 1 tablespoon of brown sugar on top of every chop. Place 1 tablespoon of margarine on top of the brown sugar.
- Cover pan with foil and bake in preheated oven for 20 minutes. Flip the pork chops and back for another 20 minutes. Remove foil and bake for an additional 15 – 20 minutes, until browned.
