Apple Pie With Bacon Lattice

If you’re a pie person, or a bacon person, or an apple pie person, or all of the above, you’re going to love this. If you’re looking for a new pie to help you win friends and influence people, this is it – an apple pie with a woven lattice made out of bacon – this season’s It-dessert. The bacon cooks beautifully atop the apples, subtly infusing them as their steam keeps the bacon moist and from shrinking. It cooks in the same amount of time as the apples, and turns out tender and totally slice-able – a match made in pie heaven. Add a slice of cheddar – on top, or shredded and stirred into the crust – and you’ve got yourself pietopia!

Ingredients: 

Pastry for a single crust pie
6 apples, peeled and thinly sliced
2/3 cup sugar
2 Tbsp. flour
2 tsp. cinnamon
pinch salt
8-10 slices bacon

Directions:

Preheat the oven to 350F.

Line a 9″ pie plate with rolled-out dough; trim and crimp the edges.

Peel and slice the apples into a large bowl.

In a small bowl, stir together the sugar, flour, cinnamon and salt; sprinkle over the apples and toss to coat. Pile the apples into the crust and spread them out evenly.

Place 4 slices of bacon evenly across the apples.

Weave the other 4 pieces over and under the first 4, tucking any ends in alongside the apples.

Bake for an hour, until the apples are tender, the crust is golden and the bacon is crisp.

Let the pie set for at least 30 minutes before slicing.

Serves: 8.
