Seasoned Black Eyed Pea Fritters: Serve these crisp fritters at a New Year’s Eve party, as a side dish or a snack.
Ingredients:
- 1 cup sour cream
- 2 1/2 teaspoons Seasoned Salt divided
- 1/4 teaspoon Seasoned Pepper
- 2 cans (15 1/2 ounces each) black-eyed peas drained and rinsed
- 2 eggs lightly beaten
- 1 cup finely chopped onion
- 1/2 cup finely chopped red bell pepper
- 1/2 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda

- Mix sour cream, 1/2 teaspoon of the seasoned salt and seasoned pepper in small bowl until well blended. Cover. Refrigerate until ready to serve.
- Mash black-eyed peas in large bowl. Stir in remaining ingredients, except oil, until well blended.
- Heat oil in large deep skillet on medium-high heat. Drop bean mixture into oil by 1/4-cupfuls, flattening slightly. Cook fritters, turning once, 7 minutes or until golden brown.
