Cherry Pie Filling
Ingredients:
4 cups fresh or frozen tart cherries, pitted
1 to 1 1/2 cups granulated sugar
1/4 cup cornstarch
a splash almond extract, optional
Directions:
Heat cherries over medium low in sauce pan; cover. Cherries will lose considerable juice after a few minutes or so; remove from heat.
Mix together sugar and cornstarch in small bowl; pour over hot cherries, blend well. Mix in almond extract, if using.
Cook over low heat until thickened, stirring frequently.
Remove from heat; let cool.
