Poor Man’s Oat Pie
Ingredients:
1/2 cup corn syrup, light or dark
1/2 cup sugar
3/4 cup rolled oats
1/2 cup coconut
1/2 cup butter, melted
2 eggs, well beaten
1 teaspoon vanilla extract
1 unbaked pastry shell
3 oz. pecan halves
Directions:
Preheat oven to 350 degrees F. Place pie shell in pie plate; prick with fork.
Mix together sugar, corn syrup, oats, coconut, butter, eggs and vanilla. Pour into crust.
Bake 15 to 20 minutes; remove from oven; arrange pecans on top of pie; bake 30 additional minutes or so; until well browned. Serves 8 portions.
Variation:
Chop pecans and sprinkle over top in place of halves.
