Slow Cooker Chicken and Apple Curry

Ingredients:

2 lbs boneless chicken, cut into 1 inch cubes or Pork
1 Medium Apple, peeled and Chopped
1 small onion chopped
1 Tbsp. Curry Powder
1 tsp Chicken bouillon granules
1 garlic clove minced
1/2 tsp salt
1/2 tsp ginger
1/4 tsp ground cinnamon
2 Tbsp. Corn Starch
2 Tbsp Water
Hot cooked rice, optional ( i used brown rice to be a little healthier)
1/4 raisins/ cranberries
1/2 flaked coconut, toasted


Directions:

1. In a slow cooker combine the first 10 ingredients. Cover and cook on low for 5-6 hours or until meat is tender
2. Increase heat to high. In a small bowl combine cornstarch and water until smooth; stir into slow cooker. Cover and cook for 30 minutes or until thickened stirring only once
3. serve with rice if desired sprinkle with raisins and coconut.
