Chicken Parmesan Meatballs

Chicken Parmesan Meatballs recipe

Ingredients:

  • 1 lb ground chicken
  • 1 cup breadcrumbs (I used Panko ), divided
  • 1 medium onion, finely chopped
  • 1 tablespoon chopped fresh parsley
  • 1/2 cup Parmesan cheese
  • 2 tsp garlic salt
  • 1 tbsp teaspoon black pepper
  • 1 garlic clove, minced
  • 1 large egg, beaten
  • 8 oz mozzarella
  • marinara sauce

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray a muffin pan with non-stick cooking spray.
  3. Cut the mozzarella into 1" cubes.
  4. In a medium bowl, stir together 1/4 cup of the breadcrumbs, onion, parsley, parmesan, salt, pepper, garlic, and egg until well mixed.
  5. Add the ground chicken and use your hands to gently mix together with the other ingredients (get your hands wet beforehand and it won't be as messy).
  6. Form the meatballs by rolling the mixture into a ball with your hands, making a ball about the size of your palm.
  7. Press a cube of cheese into the middle of the meatball and form meat around the cheese until covered.
  8. Place remaining breadcrumbs into a bowl.
  9. Roll meatballs in the breadcrumbs, then place into muffin tin.
  10. Bake for 20-25 mins, until cooked all the way through.
  11. Top with marinara sauce and serve!

Chicken Parmesan Meatballs


Ingredients:

1 1/4 pounds ground chicken
1/2 cup breadcrumbs
2 tablespoons chopped onion
1 tablespoon chopped parsley
1/2 cup Peccorino (or Parmesan)
salt to taste
pepper to taste
1 clove garlic, minced
1 teaspoon fennel seeds
1 egg, whisked
zest of half a lemon
3 tablespoons olive oil
1 14-ounce can store bought pizza sauce (such as Don Pepino’s)
about 4 ounces fresh mozzarella (a dozen thin slices; to pile on the cheese would be to cancel out the fact that you were virtuous enough to replace fatty beef with lean chicken)


Directions:

Preheat oven to 400°F, setting rack to upper third part of oven. In a large bowl, using your hands, gently mix together first 11 ingredients. Shape into lacrosse-ball size balls (that would be somewhere between golf and tennis) and place a few inches from each other on a foil-lined baking sheet. In a small bowl, mix one spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Bake for 15 minutes.

Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese. Broil another 3 to 5 minutes until cheese is bubbly and golden. Heat remaining sauce in a small saucepan. Serve meatballs with a dollop of sauce and a raw Tuscan kale salad that has been shredded and tossed with shallots, Peccornio, olive oil, salt, and pepper.
