Chow Chow


Old family favorite.

Ingredients


Grind all together and put into pan:
1 medium head cabbage
8 to 10 quarts green tomatoes
6 green peppers
3 to 5 onions

Add:


2 1/2 cups sugar
2 1/2 to 3 cups vinegar


Directions:

Tie in a cloth 3 Tablespoons pickling spices and immerse in the pan.

Simmer slowly 2 1/2 to 3 hours.

Remove the spice and fill into hot sterile jars, wipe rim, seal with hot sterile lids and rings.

Process in full boiling water bath 10 minutes. It smells wonderful!

Green Tomato Chow Chow












Ingredients:

1 quart chopped cabbage
4 c. chopped green tomatoes
3 c. chopped onions
4 green bell peppers chopped
2 red bell peppers chopped
3 tbs. plain salt
1/4 med size hot jalapeno diced fine ( optional)
1 tsp pickling spice tied in a rag
3 c. vinegar
2 c. sugar
2 tbs. celery seeds
2 tbs. mustard seeds
1 tsp turmeric

Directions:

Combine vegetables in a lg. container or dish pan. Sprinkle salt over mix up well then cover with a clean cloth and let stand overnight at room temp. Drain or take hands and squeeze off juice. Combine sugar, spices and vinegar in a large saucepot and simmer 12 min. Now add vegetables and boil for 35 min and ladle into pint jars. Hot water bath for 15 min in a boiling water canner. Remove set aside to seal. Enjoy. Optional 1 tsp pickling spices tied up in a rag and cook with vinegar and also with vegetables. Remove spice rag before canning.
