Granny’s Zesty Cheese Balls
Ingredients:
16 oz cream cheese, room temperature
16 oz Velveeta cheese, room temperature
16 oz Pepper Jack cheese, shredded
1/3 cup yellow sweet pepper, diced
1/3 cup red sweet pepper, diced
1/3 cup orange sweet pepper, diced
¼ cup Lime Juice
½ tsp lemon thyme
Dash Cayenne Pepper, optional
Chopped walnut or pecans to roll in, optional
Fresh parsley, chopped to roll in, optional
Directions:
Cream together Velveeta and cream cheese until smooth. Blend in Pepper Jack cheese. Blend in sweet peppers, lime juice, lemon thyme and cayenne pepper if using.
Chill a minimum of 2 hours or over night. Form in to balls (any size), roll in parsley or nuts if using, wrap in plastic wrap and chill at least an hour. Serve with an assortment of veggies and or crackers.
Variation: Form balls in 1 inch size for individual servings or 3 or 4 large size. Roll some in walnuts, pecans or parsley.
