World's Best Pork Tailgating Nachos
Ingredients:
1.5-2 lbs pork shoulder/butt
1 tablespoon salt
for the potatoes
4 russet potatoes, cut in half and then sliced thin
olive oil
salt
for the nachos
colby jack cheese, shredded
1 lb bacon, cooked and chopped
bbq sauce
cilantro, chopped
sour cream
Directions:
Place the pork on a platter and sprinkle evenly with the salt. put the pork in the slow cooker and cook on low for 8 hours until tender and falling apart.
heat an oven to 450 degrees. meanwhile, drizzle a little olive oil on a cookie sheet and toss the potatoes in the olive oil. bake the potatoes for 10-15 minutes, flipping halfway through and cooking until golden and tender.
layer the potatoes, pork, cheese and bacon in a cast iron skillet or cookie sheet ending with cheese on top. heat the oven to broil and bake the nachos until melted and gooey. sprinkle additional bacon on top, sour cream, bbq sauce and cilantro. enjoy!
