Magic Brownie Pudding

I thought this pudding was magic because it had a brownie layer on top and chocolate pudding underneath.

Ingredients:

Serves: 10 

  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1/2 cup chopped pecans
  • 6 tablespoons unsweetened cocoa powder, divided
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons vegetable oil
  • 1 cup firmly packed light brown sugar
  • 1 cup boiling water
Directions:
  1. Preheat the oven to 325F. Grease an 8x8-inch baking dish
  2. Combine the flour, granulated sugar, pecans, 4 tablespoons cocoa, baking powder and salt in a medium bowl and mix well. Stir in milk and vegetable oil. Spread in prepared baking dish.
  3. Combine brown sugar and remaining cocoa in a small bowl and mix well.
  4. Sprinkle the brown sugar mixture evenly on top of batter in baking dish. Pour boiling water on top of brown sugar mixture.
  5. Bake until set, about 35 minutes. Serve with ice cream, whipped cream or milk, if desired.
